This is a recipe for a salad I learned from my mom! She picked it up from somewhere else, and I don't exactly know where it's from, but I want to do my best to write it down properly. You can adjust the quanities of the vegetables depending on which you like to eat more. This is my first time writing a recipe down, so I might be vague with some quanities.

Makes two servings if without chicken. With chicken, three or more.

Ingredients:

  • 1 cup couscous (or other pasta)
  • 1 bell pepper
  • Half a red onion
  • Cucumber - ve usually use half an English cucumber.
  • 1 cooked chicken breast (...I think? Or was it a chicken thigh... or however...) (also optional but if you want to feel full, add this)
  • Feta cheese, to taste (optional)
  • Pepper, to taste

Salad dressing, taken from this site. This site's variant has way too much olive oil in it so I usually halve what is mentioned on the site and wing the rest myself.

  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup red wine vinegar
  • Garlic, minced or powder
  • Salt, to taste
  • Oregano
  • Basil
  • Ground mustard
  • Onion powder
  • Parmesan cheese (optional)

Cook the couscous as per the instructions on the package - I boil mine for 5 minutes - and cool in the fridge. Chop the vegetables. I recommend having cooked chicken already cooled in the fridge - it's easy to freeze and save in advance for these meals, if you're like me and don't like doing too much prep work.

Add the salad dressing - you can use store-bought if you don't want to mix these up, but I find it's much more delicious with this sort. Mix well and sprinkle feta cheese to taste.
